Hitching Post Saloon

The Post That Wouldn’t Quit

In the quiet neighborhood of Bakerville, away from the bustling tourist corridors of Main Street, sits a low-slung building with a neon glow and a massive history. The Hitching Post Saloon has been a cornerstone of Bisbee life since 1947, and in late 2025, it remains the town’s premier “neighborhood living room”—a place where the beer is cold, the welcome is warm, and the atmosphere is delightfully eccentric.

The biggest buzz surrounding the “Post” this year is the evolution of its food scene. Long known for its “Wurst Thursdays,” the saloon has leveled up in late 2025 with the arrival of LadyBird Pizza Kitchen. Now, patrons can pair their craft pints with artisan pizzas, making it a destination for foodies and dive-bar aficionados alike.

The bar is famous for its large dance hall and regular live music, ranging from local country-western to traveling indie acts.

What makes the Hitching Post Saloon special is its refusal to be just one thing. It is a quiet spot for a midday drink, a raucous venue for live local music on the weekends, and a safe sanctuary for everyone in between.

If you want to experience the “real” Bisbee in 2026—the one that exists when the day-trippers head home—hitch up your horse (or your car) and step inside. It’s a reminder that the best part of any town isn’t its monuments, but the people you meet at the bar.

It is known for hosting eclectic events like jello wrestling, mud wrestling, and hotdog eating contests.
