Patisserie Jacqui is a nationally recognized, French-inspired bakery located in a “wes-anderson-pink” building in the central gully of Old Bisbee.

Founded in early 2019 by self-taught pastry chef Jackie Oatman, it has become a major destination for culinary tourists. In 2025, Oatman was named a James Beard Foundation semifinalist for “Outstanding Bakery,” placing the small-town shop among the top 20 bakeries in the nation. This national recognition has led to a significant increase in visitors, often resulting in long lines and items selling out by midday.

Patisserie Jacqui operates primarily as a walk-up window service out of a Dutch door. There is no interior seating, but a small, sun-drenched outdoor patio is available for patrons.

The bakery is celebrated for its exquisite lamination and creative ingredient combinations. Highlights include the Sonoran Croissant (featuring Mexican street corn, goat cheese, and candied jalapeños) and the “What the Duck?!” (roast duck, caramelized onion, and butternut squash).

A local favorite named after the nearby mine, featuring a fudge base, pecans, lavender-infused sea salt caramel, and a cookie top. Other top sellers include passionfruit cheesecakes (gluten-free), classic eclairs, and Hungarian peanut butter cookies.
